If you've been to your local farmers market or grocery store lately then you're sure to see an abundance of corn for sale. I absolutely love corn on the cob so this is good news for me. Last week I think I came home with 15 ears of corn. We have been trying new recipes and this fresh corn salad was a total hit.
What you need:
6 ears of corn
2 Tablespoons of olive oil
1 tsp of Kosher salt
1 Lime juiced
3 Tablespoons of finely diced red onion
1 handful of cilantro
This is one of those recipe's that doesn't need exact measurements. If you love cilantro, add more cilantro; if you love lime, add more lime.
This is so fresh and delicious. We took it to a barbeque gathering for Memorial Day and our friend that doesn't like cilantro (I know! Who doesn't like cilantro?) couldn't stop eating it.

ReplyDeleteLooks delicious-- I like the lime with the cilantro. I often make a corn salad using red onion, vinegars and basil. This would work great as a side for my Mexican-inspired Father's Day meal! Thanks.
